Texas Hill country olive company

Texas Hill Country Olive Company is a slice of Tuscany right here in the Lone Star State.  Located just outside of the beautiful town of Dripping Springs, this family-owned gem offers an experience that is totally different from your typical weekend outing.

It is the perfect spot for a relaxing day trip where you can escape the city noise and soak up some sunshine.  Not far from Austin, if that's where you happen to be based.

As you drive up to the property, rows of olive trees set the stage of the Italian countryside. The architecture features a stunning limestone building that looks like an old-world mill, getting you ready for a truly unique adventure.

I know it's not technically a winery, but work with me on this one.  Yes, from the name, they have olive oil.  But... they also have barrel-aged balsamic vinegars.  And the last time I was in there, I know I saw wine too.

Texas hill country olive company history

The story behind this place is just as charming as the views. A father and daughter team, John and Cara Gambini, started the Texas Hill Country Olive Company because of their deep passion for food and their Italian heritage.

They wanted to create fresh, local, and organic olive oil right here in Texas. They planted their first trees in 2009, and now they run the most awarded olive oil company in the state.

You can feel the love and dedication they put into every bottle produced on the land. It is rare to find such authentic roots and family pride on display, and it makes your visit feel special.

World class quality

While many people flock to the area for the famous Texas Hill Country wineries, this orchard offers a refreshing change of pace.

It stands out because it is the only certified organic olive orchard in Texas.

This commitment to organic farming means you get the purest flavors possible without any harsh chemicals. The orchard takes advantage of the rocky soil and slope of the land, which is very similar to the growing conditions of Italy.

This unique environment allows them to produce world-class oils that rival anything you would find in Europe. It is a distinctive choice for travelers who want to explore something new and healthy.

When you take a tour here, you get an inside look at how they make their "liquid gold." The guides walk you through the history of the orchard and explain the fascinating process of harvesting and milling.

You will see the state-of-the-art Italian mill where the magic happens. The team presses the olives almost immediately after harvest to preserve freshness. This quick turnaround from tree to bottle ensures the highest quality extra virgin olive oil.

It is an educational journey that gives you a newfound appreciation for what goes into your kitchen pantry.

A new skill in tasting

The highlight for most visitors is undoubtedly the tasting experience.

You get the chance to sample a wide variety of their award-winning oils. You might try the Sola Stella, a delicate oil that is perfect for baking, or the Terra Verde, which packs a robust and peppery punch.

The staff teaches you how to taste olive oil properly, much like a wine tasting. You cup the glass to warm the oil, smell the aroma, and then take a sip to detect the different notes. It is a fun and interactive way to discover which flavors your palate prefers.

But that's not all

The fun doesn't stop with just olive oil; their selection of balsamic vinegars is equally impressive.

They offer traditional styles as well as an exciting array of fruit-infused balsamic vinegars.

Imagine dipping fresh bread into a mixture of garlic olive oil and blackberry balsamic. The flavors explode in your mouth.

From sweet peach to savory fig, there is a flavor profile for everyone. These tastings open your mind to new culinary possibilities and inspire you to get creative with your own cooking back home.

the bistro is onsite

After you stimulate your appetite with all those samples, you will want to grab a bite at the onsite Bistro. The food here is fantastic and highlights their products perfectly.

I would recommend ordering a cheese and charcuterie board to share, because it pairs very well with the oils and vinegars. They also serve delicious paninis, fresh salads, and soups that incorporate their garden-grown ingredients.

It is a casual yet elegant dining experience where you can sit on the patio, enjoy the breeze, and savor a high-quality lunch.

Even though this is an olive orchard, they know their audience well. For those who love the vibe of Hill Country wineries, you will be happy to know they serve wine too.

You can enjoy a glass of local Texas wine or even a mimosa alongside your lunch. It is the best of both worlds.

You get the agricultural beauty of the orchard combined with the relaxation of a vineyard setting. This makes it an easy choice for groups where some people might prefer oil and food while others want to sip on a nice red or white wine.

no rush... take your time

One thing that guests consistently rave about is the warm, friendly people who work there.

The staff greets you with genuine Texas hospitality mixed with Italian warmth. They are incredibly knowledgeable and eager to answer any questions you have about the trees or the products.

You never feel rushed or intimidated. Instead, you feel like a welcome guest in the Gambini home.

This welcoming atmosphere is a huge reason why people choose to return to the Texas Hill Country Olive Company time and time again.

The Olive oil club

If you fall in love with their products (which you probably will), they offer a fantastic membership program called the Olive Oil Club.

Joining the club brings the orchard right to your doorstep.
