If you are planning a trip through the beautiful landscapes of Texas, a visit to Coopers is an absolutely must.  Now, that is not a direct order...

But... the Texas Hill Country does offer a unique escape from the hustle of city life. 

Among the many Hill Country Restaurants that dot this scenic landscape, Coopers Old Time Pit Bar-B-Que stands out as a true landmark.   It has built a reputation that draws visitors from all over the world.

it's called cowboy style

They cook their meat using the "Cowboy Style," which means they grill it over direct heat from hot mesquite coals. This method sears in the juices and creates a flavor profile that you just can't find at other BBQ Restaurants.

But, it's a little confusing to me.  Because I think of grilling like you would normally do in your back yard with burgers and such. 

So the last time I was there I, asked one of the Pit Masters about it.

He told me that smoking (grilling) the meats gets started on a staggered schedule around 3:00am every morning.  From what I could find out, the grilling actually does take place over direct hot mesquite coals. 

But the meat is several feet above the coals so that it cooks slower and doesn't burn.  Then, when it's ready, they move the meat up to the front grills for slicing and serving. 

They also use a "preburn" (if that's a real word) pit for the mesquite.  That way they can shovel hot coals into any of the numerous pits, as needed, to maintain temperature control.

Anyway, regardless of the details, their signature seasoning and smokey pits enhance the flavor to the point that it is simply unique and quite superb.

Walk right up

The dining experience at Coopers BBQ is unlike your typical sit-down restaurant. You don't walk inside and wait for a waiter to bring you a menu. Instead, you walk right up to the massive outdoor pits.

A friendly pitmaster greets you, holding a knife and ready to serve whatever catches your eye.

You get to see the brisket, ribs, and sausage sizzling right there in front of you. You point to what you want, and they slice it up on the spot, piling it high on a tray. This interactive style makes you feel like part of the family and ensures you get exactly the cuts you crave.

You cannot talk about this place without mentioning their most famous menu item. Coopers BBQ is known far and wide as the "Home of the Big Chop."

This massive, two-inch-thick pork chop is a masterpiece of grilling. It is tender, juicy, and seasoned to perfection.

Many visitors make the trek to Llano specifically to tackle this legendary piece of meat. While other places might offer standard chops, Coopers takes it to a whole new level. It is the kind of meal that you will want to snap a photo of before you take that first delicious bite.

Of course, the menu offers much more than just the Big Chop.  You will find mouth-watering brisket that melts in your mouth, and beef ribs that are practically prehistoric in size.

If you are feeling adventurous, give the cabrito a try.  It is a regional delicacy of roasted goat meat.

The variety of meats ensures that everyone in your group finds something they love.  Since you pick your meat directly from the pit, you control the portion size, making it easy to sample a little bit of everything.

Time to head inside

Once you have your tray of meat, step into the the indoor rustic and communal atmosphere to round out your meal with classic sides.  You can load up on traditional favorites like potato salad, coleslaw, and corn on the cob.

One of the best perks is the pot of pinto beans, which is often available for free to diners.

While you're enjoying your meal at one of the long picnic tables that invite conversation, don't get carried away and eat too much.  You definitely need to save room for dessert.

Their fruit cobblers, especially the blackberry (my favorite) and peach, are the perfect sweet ending to a savory feast.
